I have to be honest with you: when I finally scored a reservation at Zahav, I felt like I’d won a small lottery, and honestly the dinner itself felt like an even bigger prize. But here in Philly, where the competition for a good table can feel as heated as arguing over the best cheesesteak at 2 a.

m., this is a city of two very different Israeli experiences.

You have the grand, multi-act opera of Zahav’s lamb shoulder and anticipatory service, and then Dizengoff’s bright, sun-drenched counter near City Hall, where the fluffy pita and silky hummus are a casual, equally brilliant weekday win. Trust me, I’ve closed my eyes at both.

I have to be honest with you: when I finally scored a reservation at Zahav, I felt like I’d won a small lottery, and honestly the dinner itself felt like an even bigger prize. The service is the kind that somehow knows you’re reaching for your water glass before you do, which is eerie in the best possible way, and it makes every course feel like a gentle, well-choreographed surprise. Then there’s the lamb shoulder, which arrives looking almost unassuming, but it pulls apart with a whisper and tastes like pure, smoky devotion; I’m fairly certain I closed my eyes at the table more than once. The hummus here is so silky that I wanted to request a bath, and every plate that night carried a little bit of anniversary magic even though it was just a random Tuesday. Reservations demand serious planning, sure, but that only makes the payoff sweeter. I left already planning my return.

If Zahav is the grand, multi-act opera of Israeli dining in Philadelphia, then Dizengoff is that perfect little pop song you can’t stop humming, and I mean that as the highest compliment. Tucked right near City Hall, the space is bright and warm, with sunlight bouncing off the counter while you watch your pita puff up in the oven, impossibly fluffy and browned in all the right spots. The hummus here is the star, silky smooth in a way that makes you wonder if they’ve hired a tiny orchestra of olive oil to conduct it, and it’s served with fresh, carefully prepared sides that feel thoughtful rather than fussy. Everything is reasonably priced, which explains the Bib Gourmand nod, and honestly I could eat here weekly without breaking my budget or my heart. The lines can be real, but the payoff is immediate. This is the hummus I’d choose on a lazy afternoon when I want something simple, bright, and utterly satisfying.
